Food Trip 50 - Pancit Lomi

Chinese people would oftentimes prepare pancit for special occasions because for them, pancit represents long life. Since it is a new year and we would be praying for a long and bountiful life, a fitting new year offering would be variation of pancit called lomi. 

Pancit lomi is a Filipino-Chinese dish made from a thick fresh egg noodles. Either prepared dry or with broth, it is oftentimes prepared with pork, liver, cabbage, carrots, shrimp, kikiam, and topped with slices of hard boiled eggs.
