When we were in Ilocos specifically in the town of Vigan, I got curious about the bamboo tubes (buho) with pink crepe paper. Without any hesitation, I approached the smiling vendor and inquire about the item that he is selling. I was surprised when he opened a small tube and allowed me to taste it for free.
Tinubong is a delicacy in Ilocos. Its main ingredients are sticky rice, strips of young coconut meat, sugar, and coconut milk. In addition, cheese and margarine are added in order to enhance its taste.
Tinubong is slowly cooked in charcoal embers and when the bamboo tubes turn from green to slightly scorched black, it is the sign that tinubong is already cooked.
